Macadamia & Vanilla Biscuits

This is one of those times where I just threw all the ingredients together and hoped for the best. Surprisingly it worked (this never happens). What I love about biscuits like this is that they can easily be wrapped up and put in a bag to take out with you, because having food intolerances means that you can't always be sure that places will have foods that you're able to eat. Usually when I'm heading out anywhere, I put something like this in my bag just incase. There's nothing more frustraiting than being hungry but not being able to eat!


ANZAC Biscuits

This is one of my most frequently cooked recipes. I alter the recipe a bit each time I make them, but I'm sure that this one is definitely the best (they have been family tried, tested and approved). They will also keep for ~ 5-7 days so are great to have in the pantry.

The Low-FODMAP Diet

The low FODMAP diet was developed as a form of symptom management for people with Irritable Bowel Syndrome (IBS) and food intolerances. It involves eliminating certain groups of "sugars" (or short-chain carbohydrates to use the scientific term) that are commonly poorly digested in the small intestine and are therefore likely to cause digestive related symptoms including abdominal pain, nausea, bloating, increased wind, changes in bowel habits (constipation or diahhorea).

My Story

My name’s Jess and I’m a 21-year-old girl from Perth, Australia. When I was 16 I started getting a lot of unexplained pain and fatigue. My activity and stress levels had just dramatically increased after I began studying a certificate IV in musical theatre whilst completing an intense workload at school for year 11. After a month or so, my body began to crash. I had been working it to a level that was too much, so as a result I began to get pain in my hips, which then progressed to other joints & areas, and my existing back pain got worse.
